Ingredients:

  • 1 kg plain yogurt (3%-5% fat)

  • 1 tsp salt

  • Cheesecloth or clean kitchen towel

  • A bowl and strainer

Instructions:

  1. Mix the yogurt with the salt.

  2. Place the cheesecloth in a strainer over a bowl.

  3. Pour in the yogurt.

  4. Tie the ends of the cloth and place it in the fridge.

  5. Let it strain for 24 hours – the liquid will drain and
    the texture will become thick and creamy.

  6. Serve with olive oil and a sprinkle of za’atar.
